The traditional dishes of Nisyros are ‘boukounies’ (pork cooked in fat), ‘kapamas’ (stuffed goat), ‘pitthia’ (chickpea balls), myzithra cheese, ‘agramytthozoumo’, caper, the cheese of “tyria”. When it come to the sweets, taste ‘xerotigana’, ‘diples’ (fried partry strips), donuts, ‘foinikia’, ‘kourampiedes’ (sugar buns), ‘moustalevria’ (must-jelly), preserves, ‘pastellaries’ (figs opened with almonds and sesame).
Known traditional beverages are ‘soumada’ (bitter almond juice), ‘koukouzina’ (distillate from grapes or figs having similar taste with ‘raki’) and ‘sapsycho’ (rosemary). All these are made with traditional recipes passed down from one generation to the next.
